Orange Rabbit Meat Stir-Fry. Man, I wish I had a rabbit thawed out tonight... this looks GOOOD!
Orange Ginger Rabbit Stir-Fry
Serves 3-4
Meat from one rabbit, approx. 1 lb., cut into thin strips
2 tbsp. olive oil, split
½ medium onion , chopped
2 cloves garlic, minced
2 medium carrots, peeled and sliced
1 yellow pepper, seeded and sliced
1 tbsp. minced ginger
2 tsp. dark sesame oil
Juice from one orange
3 tbsp. Bragg Liquid Aminos (or tamari soy sauce)
1 head of broccoli, stems removed, cut into florets
1 tbsp. toasted sesame seeds
2 tsp. arrowroot powder/starch (can substitute flour or cornstarch)
If your sesame seeds are not already toasted, place them in a small sauté pan on medium heat for about 3-4 minutes or until lightly browned. Set aside.
Lightly salt the rabbit. Set aside.
In a wok or a large sauté pan heat 1 tbsp. of olive oil over medium heat. Add onions and sauté for 3-4 minutes. Add garlic and cook for another 2 minutes. Add carrots, yellow pepper, and ginger and stir well. Cook for 2-3 minutes. Add sesame oil, orange juice, liquid aminos, and broccoli and stir well.
In a separate sauté pan heat 1 tbsp. of olive oil over medium heat. Add the rabbit and brown evenly. Then transfer rabbit to the wok.
Stir in the sesame seeds. Cook for 5 minutes or until the rabbit is thoroughly cooked, stir frequently. Add the arrowroot powder and make sure it is mixed in well. Allow sauce to thicken for 1-2 minutes.
Pour over rice and enjoy!
